Pomegranate tree (Punica granatum L.) is a native plant of Middle East and Iran and from there it spread to the other parts of the world [1]. Various parts of pomegranate fruit are full of bioactive compounds [1] some of which have therapeutic properties [1]. Therefore, pomegranate fruit has been used as a food and traditional medicine for thousands of years. Pomegranate is consumed as fresh, and in processed form as juice, wines, flavors, and extracts [2].

Lidoma Golden Day Ltd. takes utmost care in selecting the best fruits for production of fruit juice concentrates. The product is produced in a sophisticated factory with modern machinery imported from Italy.

Care is taken to separate pomegranate husk from arils during crushing of the fruit. During pomegranate juice production If the rind fragments of are not separated from arils during the production of juice, the resultant pomegranate juice concentrate may taste bitter due to the incorporation of tannins originally present in the fruit husk. Tannins are beneficial antioxidant compounds for the human body. However, extra amount of tannins in the husk does not taste very good to humans. We make sure that materials from husk are incorporated in the juice as little as possible. Our pomegranate juice concentrate does not taste bitter, tastes as it should, and looks as it should.

The brix level of natural pomegranate juice varies from 10 to 14°Bx, whereas that of pomegranate juice concentrate is 65°Bx. This means that pomegranate juice concentrate is about 4.5 to 6 times more concentrated than the juice. The pomegranate juice concentrate can be reconstituted back to a brix of 10 to 14°Bx by addition of drinking water.

This product is suitable for reconstitution as pomegranate juice, or for use in tarts and other items of confectionery as well as in ice-creams. After reconstitution to a brix of 10 to 14, the color is red to light red. Therefore, the product can be used to make juice which is packed in glass bottles.
